Tonight i made dinner from a recipe i'd never tried before. Cooking Light: Shrimp and Grits. Here's the Recipe i mean it looked SO easy and SO good and Max was interested in it. all signs said YES make this recipe.


here's how it went.

6:00 ish i get started. well, actually around 5:30 i start walking in and out of the kitchen trying to decide whether to bake cookies to eat as dessert after all is said and done. but i'm tired so instead i decide to watch the Jonas Brothers on Oprah and wish that Oprah would have John Friend on. (he'd be a really good guest by the way). so 6:00 i start thawing the frozen shrimp we bought yesterday. they're sealed in a bag so i have to open the bag with scissors. walk to the cabinet get the colander take it to the sink. well... yes that's helpful but we still need the scissors... walk back to the other side get the scissors dump in the shrimp and start the thaw under cold running water.

next, preheat the oven. ok, easy right? hit bake to set the temp, set the temp to 375 and immediately hit CANCEL because i didn't really want to preheat. so again, hit bake, set temp 375, now hit BAKE again and we're on.

next, get the milk and broth together into a sauce pan. 2 cups milk and 3/4 cups broth. using the two cup pyrex pitcher it makes total sense to pour out the milk one cup at a time. right? ugh. the broth made it ok.

next, chives must be chopped. Lucky me, my mom brought some this weekend that i haven't managed to plant yet so i pick fresh chives in my dining room and chop them up. also grate parmesan cheese and manage to measure out two tablespoons of butter and three ounces of low fat cream cheese with no major mix ups. all ingredients are accounted for except parsley which i meant to buy months ago and have not remembered to do yet.

OK, time to add heat. Shrimp are thawed and we're on the way. first step boil the milk and broth and stir everything with a wire whisk. so it really makes sense to get out the plastic spatula to use for that part. oh yeah, GRITS would be good to have here too. measure out one cup of those and get the salt ready. NOW all ingredients are a massed.

about this time Max gets home and starts helping.... and talking. wanting to be a helpful 'housewife' (as he called me after hearing i was watching Oprah today) i do listen in, but that makes my attention divided, and you see how much success i was having with FULL concentration. Max offers to chop the shrimp and he starts reading the actual directions which is a big help. the entire process starts to look up.

milk and broth boil (but don't curdle) and now it's time for the salt and grits. ... so of course, i dump the butter in and am about to add the parmesan.... dang it!!!! GRITS first. thank goodness this is a one pot recipe. finally the grits get thick. in go the cheeses followed by the spices and the chopped shrimps.

all's well, into the casserole pan and then the oven for 25 minutes. luckily i can't screw this up. in the meantime i microwave my absolute favorite food through this entire pregnancy GREEN BEANS (i know, how GOOD can they possibly get right??? YUM!) and Max thinks i'm crazy.

25 minutes later Tyco is laying in the middle of the floor with drool coming out of his mouth. SUCCESS!!!!! the dinner makes it out ok and we enjoy a sweet meal together. and it actually looked like what it was supposed to look like. it just takes a lot longer to get organized these days. i truly miss my mind.

That sounds really yummy. Also, your brain on toast looks great! :)

The Shrimp and Grits were SO easy (especially if your brain is working properly. and i can't take credit for the toast one, but i would totally eat it right now.
